We don't see much of the red-brown colour of copper forming. The explanation only comes in Year 14 chemistry. When copper is formed we then have both copper and iron metals in the salt solution. 2 metals in a salt solution produces what we call an electrochemical cell and various side reactions that will result in unexpected products - these may include gases and oxides.
